Chicken Enchilada Soup Recipe

Ingredients:

1/4 cup butter or olive oil
1/4 cup flour
2 cups milk
4 tsp better than bouillon chicken or 4 bouillon cubes
10 oz can enchilada sauce
2 cups shredded cheddar cheese
4 oz can diced green chilies
12-15 oz canned chunk white chicken, drained
sour cream
1 bag small tortilla chips*

Chicken Enchilada Soup Recipe Instructions:

  • Melt butter in large saucepan and stir in flour with wire whisk.
  • Add milk and bouillon, stirring often, until it barely simmers.
  • Add all other ingredients (except sour cream and chips), and heat through.
  • ENJOY soup on top of chips with a dollop of sour cream.
  • *Note: Reserve remaining chips for meal three.

Potato Cheese Soup Recipe

Ingredients:

2 medium large potatoes
1 1/2 cups petite carrots
1/4 cup green onion, diced
3 slices pre-cooked bacon
4 tsp better than bouillon chicken or 4 bouillon cubes
2 tsp white vinegar
1 1/4 cups milk
3 Tbsp flour
3/4 cup shredded jack cheese
1 1/2 cups shredded cheddar

Potato Cheese Soup Recipe Instructions:

  • Wash and cut potatoes into bite-sized pieces (peeling is optional).
  • Dice green onions and bacon.
  • Put 2½ cups water and first 6 ingredients in large saucepan: bring to a boil, and cover and simmer 5 minutes.
  • Whisk flour and milk together and add to saucepan with vegetables.
  • Bring to a boil and cook (simmering and stirring bottom occasionally to avoid scorching) 10 minutes.
  • Add cheeses and cook stirring until well blended.

Clam Chowder Soup Recipe

Ingredients:

1 large potato, (peeling optional)
1/2 cup yellow onion, diced
1 medium stalk celery, diced (to make 1/2 cup)
6 Tbsp butter or olive oil
6 Tbsp flour
3/4 tsp salt (or garlic salt)
1/8 tsp pepper
3 1/2 cups milk
1 Tbsp sugar
6 oz can minced clams
oyster crackers

Clam Chowder Soup Recipe Instructions:

  • Wash and prick potato: microwave 3-5 minutes until barely soft.
  • Dice potato and set aside with onion and celery.
  • Melt butter in 3 quart saucepan: whisk in flour, salt, and pepper.
  • Cook on medium low heat until bubbly, stirring constantly.
  • Add milk: stir and cook until mixture barely bubbles. (Will burn easily so stir often, and keep heat low)
  • Add all other ingredients to saucepan (except crackers).
  • Cover and cook 20 minutes on low heat, stirring every few minutes.
  • ENJOY a family favorite soup recipe with oyster crackers.
  • *Note: One small can chicken breast meat can be substituted, or just use as delicious potato soup, using 4 cups milk instead of 3½.

Broccoli Cheese Soup Recipe

Ingredients:

1 small head broccoli, (or 3-4 cups florets)
1 small "sweet" onion, chopped
1 Tbsp better than bouillon chicken or 3-4 bouillon cubes
3 cups half and half
1 1/2 cups shredded cheddar cheese
4 Tbsp butter or olive oil
3 Tbsp flour

Broccoli Cheese Soup Recipe Instructions:

  • Put 1½ cups water in saucepan with broccoli and onion.
  • Bring to a boil and boil, covered, 5 minutes.
  • Put entire contents of pan into a blender and puree.
  • Return to saucepan: add 1 cup water, bouillon, half & half, and cheese.
  • Melt butter and whisk in flour: add to pan and cook ON LOW, simmering 15-20 minutes, stirring occasionally. (Bottom burns easily)
  • Salt and pepper to taste, and ENJOY this soup recipe!
