Fabulous Pork Chop Recipe

Ingredients:

4 oz can chopped green chilies
2 tsp oregano (pantry item)
1 tsp bottled minced garlic (pantry item)
2 tsp ground cumin (pantry item)
¼ cup cider vinegar
4 lean pork chops, 1½ inch thick
2 tsp olive oil (pantry item)

Fabulous Pork Chop Recipe Instructions:

  • Blend first 5 ingredients in a blender until smooth.
  • Arrange pork in an 8x8 dish and pour vinegar mixture over, turning to coat.
  • Cover and marinate chops in mixture 4-24 hours in refrigerator.
  • Heat oil in skillet over medium high heat: remove chops from marinade, discarding any leftover marinade, and sauté chops 7-8 minutes per side, until cooked through.

Nippy Pork Chops

Ingredients:

1 Tbsp olive oil (pantry item)
4 large, lean pork chops (about 1.5 lb)
2 tsp mustard—or to taste (pantry item)
¼ cup flour (pantry item)
11 oz can cream of chicken soup

  • Preheat oven to 350 degrees and heat oil in large skillet.
  • Spread chops with a thin layer of mustard; sprinkle with salt and pepper.
  • Roll chops in flour and brown both sides in hot oil.

Braised Pork Chop Recipe

Ingredients:

4 medium potatoes (1 lb)
1 Tbsp butter (pantry item)
1 lb thin cut lean, boneless pork chops
1 small sweet onion, slice in rings
1½ Tbsp Gourmet Caesar salad dressing (dry—from packet)

Braised Pork Chop Recipe Instructions:

  • Wash and prick potatoes and microwave 4 minutes: chop.
  • Heat butter in a large, medium hot skillet and add chops.
  • Sprinkle with one-half of the dry dressing and brown chops on one side.
  • Turn chops over and sprinkle with other half of dressing, top with onion slices.
  • Add potatoes to side of skillet and stir-fry so they pick up the glaze.
  • Add 1/3 cup water to pan, cover and simmer 3 minutes.
